Paprika soup


Hi guys! I bought too many veggies at the market (never get groceries on an empty stomach) and it was taking forever to eat everything. So I decided to make paprika soup. The perfect solution when you have leftover food.


Paprika Soup

4 bell peppers (2 red, 1 yellow, 1 green)
6 tomatoes
2 onions
2 cloves garlic
2 medium sized potatoes
1 carrot
spring onion
olive oil
1.5l chicken stock
salt and pepper to taste


Chop the onions and garlic finely.
Cut all the other vegetables into cubes of about the same size. Cut the spring onions into twigs of about 10cm.
Heat up the olive oil in a big pot (5l) and fry the onions and garlic.
Add in the rest of the vegetables, except for the spring onions. Let it fry for another 5mins.
Add the chicken stock and let it boil for 30-40mins.
Turn off the heat and add in the spring onions.
When the soup has cooled down a bit, use a hand mixer to mix the soup as smooth as you want. Season with salt and pepper to taste.
